Mexican Casserole Meal Prep

Hello friends! I wanted to quickly share with you my latest favorite meal prep! I got the idea for this recipe from Simple Green Moms, and tweaked it a bit to add some meat and cheese, because those are two of my favorite things! My husband and I love this dish! It makes A LOT of food. I have to use two baking dishes, 1 8×8 and 1 9×12. If you have a bigger one, then you can probably cook it in 1 go! I like using two dishes though. I usually put one in the freezer, and then I have almost two weeks’ worth of lunched ready for the both of us! I didn’t put how long this will take, because honestly… any time I make a meal it takes me waaaaaay longer than the recipe says it will hahaha. I suppose I am really slow at prepping. Anyways, I’ll get right to the recipe, so you don’t have to keep scrolling!
