Mexican Casserole Meal Prep

Hello friends! I wanted to quickly share with you my latest favorite meal prep! I got the idea for this recipe from Simple Green Moms, and tweaked it a bit to add some meat and cheese, because those are two of my favorite things!My husband and I love this dish! It makes A LOT of food. I have to use two baking dishes, 1 8×8 and 1 9×12. If you have a bigger one, then you can probably cook it in 1 go! I like using two dishes though. I usually put one in the freezer, and then I have almost two weeks’ worth of lunched ready for the both of us! I didn’t put how long this will take, because honestly… any time I make a meal it takes me waaaaaay longer than the recipe says it will hahaha. I suppose I am really slow at prepping. Anyways, I’ll get right to the recipe, so you don’t have to keep scrolling!

Mexican Casserole Meal Prep: 

15 oz Black Beans

15 oz Corn

1 Purple Onion (cubed)

1 Jalapeño (cubed)

1 Green Bell Pepper (cubed)

1 lb Ground Turkey

2 C Brown Rice

2 tb Milk

4 oz Cream Cheese

1 tb Cilantro

1 tb Paprika

1 tb Cumin

1 tb Chili Powder

3-4 Cloves of Garlic

8 oz Mexican Blend Cheese

Salt/Pepper to taste

Preheat the oven to 425F degrees and prepare a baking dish with non-stick spray

Cook rice according to package instructions

Brown ground turkey and drain excess fat

Add all ingredients (except for cheese) in a large mixing bowl and stir until evenly combined

Transfer mixture to prepared baking dish

Sprinkle shredded cheese on top of the mixture

Bake for 30-35 minutes

Carefully remove from oven and let cool for a few minutes before serving

Prep all ingredients
Use a very large mixing bowl to combine all ingredients! I need a bigger one.
Transfer mixture to the baking dish(es)
Top with shredded cheese
Bake for 30-35 minutes
